If you don’t feel like spending time at the stove during hot summer days, you can make this no-bake dessert. Delicious pudding cream, fluffy whipped cream, crisp cookies with a subtle rum aroma, and a cocoa topping make this dessert a refreshing treat that pairs perfectly with coffee.

Preparation procedure

  • Preparing the pudding cream: In a saucepan, heat 300 ml of milk with the granulated sugar and vanilla sugar until the sugar dissolves. In another bowl, mix the remaining milk with the pudding powder and the egg. When the milk in the saucepan starts to boil, add the mixture with the pudding powder and stir constantly until it thickens. Then remove from the heat and let the pudding cool.
  • Preparing the butter cream: Whip the softened butter with the powdered sugar until smooth and fluffy. Once the pudding has cooled, gradually fold it into the buttercream.
  • Assembling the dessert: Place the first layer of butter cookies into the pan. You can drizzle the cookies with milk mixed with a little rum (or rum flavoring) or briefly dip them in the milk. Spread some of the pudding cream on the cookie layer and then add another layer of soaked cookies. Repeat layering until you run out of ingredients. The last layer should be cream.
  • Finishing: Whip the cream until stiff peaks form and spread it over the final layer of cream. Sprinkle the surface of the dessert with cocoa, Granko, or grated chocolate.
  • Chilling: Let the dessert chill in the refrigerator for at least 4 hours, ideally overnight, so the cookies can absorb moisture and the dessert can set.
