Flourless nut bars are a delicious treat appreciated not only at festive occasions but also as a dessert with your coffee. With their delicate texture and rich nutty flavor, they will delight any sweet lover. Plus, their preparation is simple and you can make them in no time!

Preparation procedure

  • 1. Dough preparation: Start by whipping the egg whites with a pinch of salt into a soft foam. Then gradually add the granulated sugar and whip until stiff peaks form. Gently fold the ground nuts and cinnamon into the meringue.
  • 2. Baking the dough: Divide the batter into two parts. Prepare two baking trays (approx. 29 x 35 cm) lined with baking paper. Spread the batter evenly on each tray. Bake in a preheated oven at 180 °C for 15 minutes. If you have a convection oven, you can bake both layers at once. After baking, let the dough cool slightly, then carefully remove the baking paper.
  • 3. Preparing the cream: Cook a thick pudding from the milk and pudding powder. Let it cool to room temperature. Meanwhile, whip the softened butter with the powdered sugar into a fluffy mixture. Gradually mix the cooled pudding into the butter mixture to form a smooth cream.
  • 4. Assembling the bars: Divide the cooled dough into halves, yielding 4 dough sheets. Spread the prepared cream on each sheet, layer them on top of each other and finish with a layer of cream. Sprinkle ground nuts on top.
  • 5. Chilling: Let the nut bars chill in the refrigerator for at least a few hours, preferably overnight, so the flavors meld and the dessert firms up.
