Preparation procedure

  • Preparation of the nut base Preheat the oven to 180°C. Whip the egg whites with a pinch of salt until stiff, gradually whisk in 8 tablespoons of sugar. Carefully fold the flour and ground nuts into the whipped egg whites. Spread the mixture onto a baking tray lined with baking paper and bake for 30 minutes. After cooling, carefully remove.
  • Preparation of the cocoa base Whisk the egg whites with a pinch of salt until stiff, then whisk in 8 tablespoons of sugar. Mix in the egg yolks one at a time, the mineral water, then the flour combined with the cocoa and baking powder. Spread onto another tray and bake for 25 minutes. Let cool.
  • Preparation of the cream In the milk, mix the pudding powder, sugar, vanilla sugars and egg yolks. Cook, stirring constantly, until thickened, then let cool. Beat the butter until fluffy and gradually whisk in the cooled pudding. Finally, fold in the ground nuts.
  • Assembling the cake Place the cocoa base on a serving plate, spread half of the cream over it. Cover with the nut base and spread the remaining cream. Sprinkle with grated chocolate and let chill and set overnight.
