This plum cake is the “bake once and everyone wants it” type. Thanks to sour cream the batter is tender and moist, cinnamon beautifully scents the kitchen and juicy plums give the cake just the right tang. It’s perfect for weekend baking or as a quick sweet finish to afternoon coffee.

Preparation procedure

  • Preparation of fruit and pan Preheat the oven to 180 °C. Line the pan with baking paper or grease and flour it. Wash the plums, halve and pit them. Let frozen ones thaw slightly.
  • Egg foam Whisk the eggs with the granulated sugar and vanilla sugar until pale and fluffy.
  • Wet ingredients Cream the softened butter with the sour cream and fold into the egg foam (optionally add rum or lemon zest).
  • Dry ingredients Sift the flour with the baking powder and cinnamon. Work into the batter in several additions until smooth and compact.
  • Fruit into the batter Gently fold half of the plums into the batter. Reserve the rest for the top.
  • Baking Spread the batter into the pan, arrange the remaining plums on top cut side up. Bake 40–45 minutes (depending on the height of the batter), until a skewer inserted into the center comes out dry. Let cool for 10–15 minutes in the pan, then turn out. Can be lightly dusted with powdered sugar.
