Preparation procedure
- Preparing the poppy seed filling: Pour the milk into a pot, add the sugar and raisins. Bring the mixture to a boil, then remove from heat. Gradually stir in the ground poppy seeds and breadcrumbs. Let cool and divide the filling into approximately 24 smaller portions.
- Preparing the dough: In a bowl, mix the flour, sugar, salt and butter. Use your hands to work the mixture into a crumbly dough. Add the egg yolk and the warm milk in which you dissolved the yeast to the mixture. Form a smooth dough, wrap it in plastic wrap and refrigerate for at least 30 minutes.
- Shaping the crescents: Divide the dough into the same number of pieces as you have fillings (about 24 pieces). Roll each piece of dough on a floured surface into a thin disc (less than 2 mm). Place a piece of filling on the disc and wrap the dough into a crescent shape. Each roll should have tapered ends.
- Baking: Place the rolls on a baking sheet lined with parchment paper. Brush them with the egg, even more than once, so they get a nice golden color. Bake in a preheated oven at 190 °C for approximately 10–15 minutes, until they turn golden.
- Serving: Serve the rolls warm, ideally with milk, tea or coffee. They also make a great sweet snack.
