Preparation procedure

  • Preparing the starter and dough Crumble the yeast and mix with the sugar until a pasty mixture forms. In a bowl whisk together the cream, yolks, egg, lemon zest and vanilla extract. Add the sifted flour, a pinch of salt and the starter. Work into a smooth dough. Finally incorporate the melted butter. Cover with a cloth and let rise for about 1 hour.
  • Shaping the rolls Divide the risen dough into two parts. Roll each part into a circle about 32 cm in diameter and cut into 8 triangles. Place a teaspoon of jam on the wider side and roll up into a crescent shape (croissant).
  • Second rising and baking Transfer the rolls to a baking sheet lined with parchment paper, cover with a cloth and let rise for another 30 minutes. Then brush them with the beaten egg and bake in a preheated oven at 180 °C for about 15–20 minutes until golden.
  • Glaze and final touches Mix the powdered sugar with hot water and whisk into a smooth glaze. Once the rolls have cooled, spread the glaze over them and let it set.
