Preparation procedure

  • Prepare the poppy seed mixture: Pour the hot milk over the ground poppy seeds, mix thoroughly and let cool so the milk is completely absorbed by the poppy seeds.
  • Beat the batter: Beat the butter with the sugar for about 4 minutes until you get a fluffy mixture. Gradually add the yolks and beat until the mixture is pale and creamy. Then stir in the semolina mixed with the baking powder. Add the cooled poppy seed mixture, orange peel, chopped nuts and almond extract to the batter.
  • Prepare the apples and egg whites: Coarsely grate the peeled apples. Beat the egg whites with a pinch of salt until stiff peaks form.
  • Finish the batter: Fold the grated apples into the prepared batter and finally gently incorporate the egg white foam.
  • Baking: Pour the batter into a pan lined with baking paper and bake in an oven preheated to 170 °C (top and bottom heat, without fan) for about 1 hour.
