Tired of rubbery or hard rolls from the store? Try this simple recipe for homemade crispy rolls that you’ll fall in love with. Fresh, fragrant and exactly the way you like them!

Preparation procedure

  • Dough preparation: From lukewarm milk, yeast and a pinch of sugar prepare a yeast starter. Let the starter activate and then add the flour, eggs, oil, salt and knead everything thoroughly into a dough. You can work the dough by hand or in a home bread machine. After rising, rework the dough on a floured surface. If it sticks, add a little flour.
  • Shaping the rolls: 1. Method: Divide the dough into 15 equal balls and let them proof for another 10 minutes. Roll each ball into an oval. With your left hand grasp the bottom edge of the oval and with your right hand roll the top part into the shape of a roll. Gently roll them so they hold their shape better. 2. Method: Divide the dough into 4 parts and roll each into a circle. Cut the circle into triangles. Fold the top tips toward each other and roll toward the bottom tip. You can also use this method for filled rolls.
  • Proofing and baking: Place the prepared rolls on a baking sheet lined with parchment paper with the tips down so they don't open during baking. Cover with a cloth and let rise for another 35 minutes. Before baking brush the rolls with beaten egg or egg yolk and sprinkle with seeds, coarse salt, poppy seeds or caraway to taste.
  • Baking: Preheat the oven to 180–220 °C. Bake the rolls first at the higher temperature for about 10 minutes, then reduce the temperature to 170 °C and finish baking until golden.
