Preparation procedure

  • Preparing the apples: Peel the apples and coarsely grate them. Mix them with the sugar and cinnamon. Melt the butter in a pan, add the apples and briefly stew them until they soften. Finally add the honey or apricot jam and stir. Remove from the heat and let cool.
  • Dough: In a bowl whisk the eggs with the sugar and vanilla sugar until light and frothy. Pour in the oil and mix again. Gradually add the flour mixed with the baking powder and stir until a smooth, pliable dough forms. Divide it into two equal parts.
  • Assembling the cake: Roll out one half of the dough and place it on the bottom of a pan lined with baking paper. Evenly spread the prepared apples over it. Roll out the second half of the dough and cover the apple layer. Lightly prick the surface with a fork.
  • Glaze: Whisk the egg white with the powdered sugar into a smooth white glaze and spread it evenly over the top of the cake. Then soften the apricot jam and, using a spoon or a piping bag, create a delicate lattice on the glaze.
  • Baking: Place the cake in an oven preheated to 180 °C and bake for about 40 minutes, until the surface is nicely golden. Let it cool completely so the glaze can set.
