Preparation procedure

  • Preparation of choux pastry: In a pot over the flame we melt the margarine in the water. Add the all-purpose flour and, with constant stirring, cook until a thick porridge-like mass forms (about 5 minutes). Then remove from the heat and let cool for a while (about 10 minutes).
  • Adding the eggs: Into the cooled dough, gradually beat in the eggs one at a time with a hand mixer until a creamy mass forms.
  • Baking the dough: Divide the mixture into two halves. Spread one half of the dough onto a baking sheet lined with (moistened) parchment paper. Place in a preheated oven and bake at 200 °C for about 30 minutes. After baking, do not open the oven for another 15 minutes. Bake the second sheet the same way.
  • Preparing the cream: Melt the granulated sugar in a pan. Once it is dissolved, pour in 750 ml of milk and stir so the milk combines with the sugar. Dissolve the pudding powders in the remaining milk and pour into the boiling mixture. Cook until the mixture thickens. Remove from the heat and let cool, stirring occasionally.
  • Adding the butter: Beat the softened butter and mix it into the cooled cream by teaspoons. Spread the cream onto one baked sheet of dough.
  • Preparing the whipped cream: Whip the cream with the stabilizer and spread it over the cream. Cover with the second baked sheet of dough.
  • Preparing the glaze: You can use store-bought caramel glaze or prepare homemade: Melt the sugar and add the milk. While stirring constantly, add the powdered sugar and cook until a smooth mass forms.
  • Finishing: Pour the finished glaze over the top of the sheet cream puff and let it cool.
