Preparation procedure

  • Preparing the zucchini Wash the zucchini, dry it and slice into rounds about 0.7–1 cm thick. In a bowl, mix them with salt, pepper and pressed garlic. Let rest for 15 minutes so the zucchini releases excess water.
  • Preparing the dressing Stir the sour cream with the chopped dill, pressed garlic, salt and pepper. Chill the finished dressing so the flavors meld.
  • Preparing the batter Whisk the eggs with the sour cream and a pinch of salt in a deep bowl. Gradually mix in the all-purpose flour and finally the grated cheese to form a smooth, slightly thick batter.
  • Coating and frying Lightly coat each zucchini round first in flour (optional, helps the batter adhere better), then in the prepared batter. Heat a pan with a sufficient amount of oil and fry the zucchini rounds until golden on both sides (approx. 2–3 minutes per side). After frying, transfer them to a paper towel to absorb excess fat.
  • Serving Arrange the fried zucchini rounds on a plate and serve with the dill dressing. You can add a slice of lemon or a fresh herb as garnish.
