  • Preparation of the beetroot: Peel and wash the beetroot to remove any dirt. Cut it into cubes approximately 1 x 1 x 1 cm in size. Put the chopped beet into glass containers where the kvass will form.
  • Adding the other ingredients: To the containers with the beets add the sugar, raisins and flour. If you are using multiple containers, distribute the ingredients evenly.
  • Pour in the water: Prepare boiled, cooled water and pour it into the containers with the beets and other ingredients. Stir thoroughly so that the sugar dissolves well and all the ingredients combine.
  • Sealing the containers: Close the containers using cheesecloth or a plastic bag into which you make holes. It is important that air can flow in, but dirt cannot. Leave the containers at room temperature for 7 days. Stir the kvass every day to ensure even fermentation.
  • Strain and seal: After a week of fermentation, pour the kvass into a clean container. Use a sieve and then a cloth to remove solid impurities. Seal the container and store it in a dark, dry place, ideally in the refrigerator.
