Preparation procedure
- 1. Preparation of the batter: First whisk the egg whites with a pinch of salt to stiff peaks. Gradually add half the sugar and whisk into a firm meringue. Whisk the remaining sugar with the butter. Mix the flour with the nuts and baking powder. To the whipped butter, alternately add the egg white meringue and the flour mixture, gently fold in with a spoon.
- 2. Baking the sponge: Spread the prepared batter evenly on a baking sheet lined with parchment paper (size 31 x 38 cm). Bake in a preheated oven at 180 °C for about 20 minutes.
- 3. Preparing the yolk layer: Meanwhile whisk the yolks with the sugar until foamy, add the vanilla sugar and vanilla extract. After 20 minutes of baking, remove the cake from the oven, pour the yolk glaze over it and return it to the oven. Bake another 10 minutes at 180 °C, then reduce the temperature to 130 °C and finish baking for 20 minutes.
- 4. Nut filling: In a saucepan bring the milk with the sugar to a boil. Add the butter and chocolate, stir until everything melts. Remove from the heat and stir in the ground nuts. Let the filling cool slightly and then spread it over the yolk layer.
- 5. Finishing: Sprinkle the surface of the cake with ground walnuts. Let the dessert set in the refrigerator, ideally for several hours or overnight.
