Ingredients: 5 eggs (yolks and whites separated); 100 g margarine or butter (soft, room temperature); 100 g granulated sugar; 100 g ground walnuts; 100 g all-purpose flour; 1 teaspoon baking powder; 320 g chocolate; 50 ml milk; 2 tablespoons sugar; 50 g ground walnuts; ground walnuts

Preparation procedure

Preparing the dough: Whip 5 egg whites into stiff peaks. In a bowl, mix the margarine (or butter) with the sugar, add the ground nuts, flour and baking powder. Gently fold in the egg white foam so the batter remains airy. Preheat the oven to 180 °C. Pour the batter into a pan lined with baking paper and bake for approximately 10 minutes.
Egg yolk cream: Beat 5 yolks with 100 g sugar until light and thick. Remove the pre-baked base from the oven and spread the yolk cream evenly over it. Reduce the oven temperature to 100 °C and bake for another 30–35 minutes, until a crispy crust forms. Let the base cool.
Chocolate cream: Melt the chocolate over low heat, add the milk, sugar and ground nuts. Stir until a smooth and thick cream forms.
Finishing the cake: Spread the prepared chocolate cream evenly over the baked base. Sprinkle the surface of the cake with ground nuts for a beautiful appearance and even better taste. Let the cake rest at room temperature or in the refrigerator so the flavors can meld.
