Punch slices are one of the most popular pastries that regularly appear at family celebrations. You will love this traditional sponge dessert with punch syrup and sweet icing. Although it may look complicated, even a beginner can bake it. So let’s get started with the preparation.

Preparation procedure

  • 1. Preparing the batter: Start by whisking the yolks with the sugar and gradually add the water. Then fold in the flour mixed with the baking powder and finally gently incorporate the beaten egg whites. Bake the batter on a baking sheet lined with parchment paper at 180 °C for 15–20 minutes. Repeat this process for 3 sponge cake layers.
  • 2. Assembling the slice: Spread a thicker layer of jam on the bottom sponge base. Cut the middle sponge layer into strips 5–6 cm wide.
  • 3. Preparing the syrup: Dissolve the sugar in hot water and bring to a boil. Then add the syrup, rum, punch flavoring and lemon juice. Let it cool slightly and sweeten to taste.
  • 4. Soaking the strips: Alternately dip the strips from the middle layer into the syrup and place them on the bottom layer so that soaked and dry strips alternate. Pour the remaining syrup only over the soaked strips so that the dry ones gradually absorb the syrup.
  • 5. Layering: Spread the remaining jam over the syruped strips and place the third layer on top. Cover it with an empty baking sheet and place heavier objects on top (e.g., a bag of flour) so the layers fuse. Put the dessert in the fridge overnight.
  • 6. Preparing the icing: Mix the sifted powdered sugar with boiling water and lemon juice until a smooth glaze forms. You can also add a pinch of red coloring so the glaze gets a pink tint.
  • 7. Final touches: The next day, spread the icing over the top layer. Let it set and then cut into individual slices with a sharp knife.
