This poppy‑seed–quark cake with chocolate glaze combines three traditional flavors in one delicious dessert. Ideal with coffee and also as a festive treat.

Preparation procedure

  • Poppy seed filling Pour hot water over the poppy seeds, bring to a boil and simmer until the liquid has almost evaporated. Stir in the semolina, mix and let cool.
  • Dough Mix the flour, cocoa, baking powder and sugar. Add the softened butter, egg, salt and sour cream. Work into a smooth dough. Wrap in cling film and let rest in the refrigerator for 30 min.
  • Quark filling In a bowl, mix the quark, sugars, egg yolks, semolina, pudding powder, zest and softened butter until smooth. Whip the egg whites into stiff peaks and gently fold them into the quark mixture. Take 500 g of this mixture and stir it together with the cooled poppy seed mixture.
  • Assembling the cake Preheat the oven to 180 °C (convection). Roll out the rested dough and place it into a (28 × 20 cm) pan, shaping the edges. Put the remaining plain quark mixture on the bottom, and spread the poppy‑seed–quark layer on top.
  • Baking Bake for 60–75 min, until the surface is nicely set. After baking, let the cake cool completely.
  • Chocolate glaze Break the chocolate into pieces, pour over the hot cream and stir until smooth. Let the glaze cool slightly and spread it evenly over the cake.
