Looking for a dessert that brings traditional flavours into one impressive slice? This poppy-quark cake with a delicate chocolate glaze is exactly that. The tender cocoa pastry, airy quark with lemon and the juicy poppy-seed layer make it an ideal treat for coffee or the festive table.

Preparation procedure

  • Poppy-seed layer: Pour hot water over the poppy seeds and cook over low heat until the excess liquid evaporates. Stir in the semolina, cook briefly, remove from the heat and let cool completely. Measure 500 g from the prepared quark filling and after cooling mix the poppy-seed mixture into it.
  • Cocoa dough: Mix the flour, cocoa, baking powder, sugar and salt. Add the butter, egg and sour cream, quickly work into a soft dough. Wrap in plastic wrap and chill for 30 minutes. Then roll out and press into a cake pan lined with baking paper, forming low edges.
  • Quark filling: Beat the butter until fluffy. Mix the quark with the sugars, semolina, pudding powder and lemon zest. Beat in the egg yolks, then fold in the whipped butter. Whisk the egg whites to stiff peaks and gently fold in. Take 500 g of the finished filling and combine it with the cooled poppy-seed mixture (see above).
  • Assembly and baking: Spread most of the plain quark filling over the cocoa dough. Layer the poppy-quark mixture on top and smooth the surface. Bake in a preheated oven at 180 °C for about 60–75 minutes, until the center springs back and a skewer comes out almost dry. Let cool completely in the pan.
  • Chocolate glaze: Pour hot cream over the chocolate and stir until smooth. Let cool slightly and spread over the cooled cake. Place in the refrigerator for at least 2 hours so the slices hold together nicely.

Serving tips:

  • For a more pronounced citrus note, add a few drops of lemon juice to the quark.

  • Cut with a hot knife wiped dry – the slices will be clean.

  • A light dusting of cocoa or a few chocolate shavings make a nice finishing touch.
