Preparation procedure
- Preparing the batter: Separate the eggs into yolks and whites. Whip the egg whites with the powdered sugar into stiff peaks. In another bowl, beat the yolks with the granulated sugar until foamy, add the cold water and gradually mix in the cocoa, baking powder and flour. Finally, gently fold in the egg white foam. Spread the batter evenly on a baking sheet greased with butter and dusted with flour. Bake in a preheated oven at 180 °C for about 20–25 minutes. Check doneness with a skewer.
- Preparing the cream: From the milk, plain flour and vanilla sugar, cook a thick custard. Remove from the heat and gradually whisk in the egg yolks — one at a time. Return to low heat and stir until a smooth, glossy cream forms. Let cool. Beat the softened butter with the powdered sugar until creamy and add it to the cooled custard spoonful by spoonful.
- Preparing the meringue layer: Over a double boiler, whisk the egg whites with the granulated sugar and lemon juice into a stiff, glossy meringue.
- Assembling the dessert: First spread the vanilla cream evenly over the cooled cake. On top, spread the prepared egg white and lemon meringue. Let the dessert chill thoroughly in the refrigerator.
- Finishing: Before serving you can sprinkle the surface with grated chocolate or decorate it as you like.
