Inspired by Latvian cuisine, where it is called Pars (translated as „flake“), the cake is truly so delicate and light that it literally melts in the mouth like a snowflake.

Preparation procedure
- Dough preparation: Separate the egg whites from the yolks. Whip the egg whites with a pinch of salt into stiff peaks. Mix the yolks with the sugar and vanilla sugar and beat until light and foamy. Gradually add the flour mixed with baking powder and gently fold in the whipped egg whites. Pour the finished batter into a pan lined with baking paper.
- Cream preparation: Beat the quark with the sugar and vanilla sugar until smooth. Gradually add the cream to create a light and fluffy cream.
- Baking: Spread the quark cream evenly over the batter and gently smooth it. Bake in an oven preheated to 180 °C for 30–35 minutes, until the surface of the cake is golden and the cream doesn't appear to be firm.
- Finishing: After cooling, sprinkle the cake with cocoa powder and serve.
