Preparation procedure
- Preparation of the dough: Separate the yolks from the whites. Whip the egg whites to stiff peaks, gradually add the sugar and continue whipping. Add the yolks one at a time and mix well. Gently fold the flour, cocoa and baking powder into the mixture. Pour the batter into a greased and floured baking pan measuring 25 × 25 cm. Bake in a preheated oven at 200 °C for about 15–20 minutes. Let the baked cake cool and cut it horizontally into two equal layers.
- Preparation of the cream: Bring the whipping cream to a boil in a saucepan. Add the white chocolate broken into pieces and stir until completely melted. Put the mixture in the refrigerator to chill for 2 hours. After chilling, add the powdered sugar and whip everything into a smooth cream. Spread the cream evenly over one layer of the cake, smooth it, and place the other layer on top.
- Preparation of the glaze: Melt the cooking chocolate together with the butter in a double boiler. Pour the glaze over the top of the cake and spread it evenly.
- Finishing: Place the cake in the refrigerator for at least an hour to allow the flavors to meld. Serve chilled, cut into squares.
