This traditional dish is very simple to prepare, yet its flavor rivals the finest delicacies. This recipe for savory bread with a bacon-and-potato filling is perfect for any occasion and you are sure to fall in love with it.

Preparation procedure

  • Dough: 650 g medium-coarse flour 30 g yeast 25 g granulated sugar 40 ml sunflower oil 15 g salt 300 ml water (warmed to 40 °C) Filling: 500 g potatoes 150 g hulled buckwheat 200 g bacon 2 onions 2 cloves of garlic 1 carrot 5 g pepper 1 egg (for brushing)
  • Filling preparation: Peel the potatoes, rinse them and cook in a large pot of salted water until tender. In a smaller pot bring 300 ml of water to a boil and add the buckwheat (in a 2:1 ratio – water ). Cook covered until the buckwheat is soft, then drain it. Cut the bacon into cubes and fry in a pan until the fat renders and only cracklings remain. Add finely chopped onion, grated carrot and pressed garlic to the bacon. Sauté until the onion turns golden. Mash the potatoes into a purée, add the buckwheat and the bacon-and-vegetable mixture. Salt and pepper to taste.
  • Bread preparation: Roll the risen dough into a 40×40 cm square about 1 cm thick. Spread the filling evenly over the dough, leaving about a 10 cm clean border. Bring the corners of the dough together to the center of the square and seal the dough. Preheat the oven to 180 °C. Transfer the bread to a baking sheet lined with parchment paper, brush it with a beaten egg and bake for approximately 40 minutes, until golden brown.
