- 1. Preparation of ingredients: Peel the apples, cut them into smaller pieces and blend them with a stick blender into a puree. Also blend the rolled oats into a fine mixture.
- 2. Separating the whites and yolks: Separate the egg whites and yolks. Beat the yolks with the honey until frothy and gradually add the other ingredients. Finally fold in the rolled oats mixed with baking soda and cinnamon. Important: Fold in the whipped egg whites with a spoon.
- 3. Dividing the mixture: Divide the mixture into two parts in a 2:1 ratio. Add cocoa to the smaller part and mix.
- 4. Preparing the pan: Grease a bundt pan (diameter approx. 23 cm) with coconut oil and dust with ground rolled oats. Layer the two batters alternately. If you want to add nuts, cranberries, almonds or other ingredients to the bundt cake, fold them in just before layering.
- 5. Baking: Bake in a preheated oven at 150 °C for approximately 55–60 minutes. Let the baked bundt cake cool with the oven door open.
- 6. Serving: Serve it with jam or simply with a coffee. The bundt cake is a bit firmer than the classic one, but it tastes really wonderful!
