Although today it is difficult to obtain this traditional salami in its original quality, if you manage to get it, you can easily prepare Parisian salad according to this original recipe. Its flavor will transport you back to times when the salad was a popular snack of workers and students.

- 1. Preparation of ingredients: First, cut the Parisian salami and pickles into thin strips. Chop the onion into small cubes and, to remove its bitterness, pour boiling water over it. Put the chopped ingredients into a bowl and add the sterilized peas.
- 2. Preparation of the mayonnaise: To make 150 g of mayonnaise use yolks from small eggs or one large yolk. Subtract the weight of the yolk from 150 g and measure out the exact amount of oil. Whisk the yolk and gradually add the oil until the mayonnaise thickens.
- 3. Mixing the salad: Add the mayonnaise, full-fat mustard, vinegar, Worcestershire sauce, sugar, salt and ground black pepper to the bowl with the prepared ingredients. Mix everything thoroughly so the ingredients combine evenly.
- 4. Finishing: Put the finished Parisian salad in the refrigerator and let it rest for several hours. During this time the flavors will meld nicely and the salad will develop its characteristic taste.
