Potatoes are a staple of Czech cuisine, but this recipe will inspire you to use them in an unconventional way. Potato pagáče, i.e. savory little cakes, are suitable as a side dish, but you can also serve them on their own. A crispy crust and fragrant cheese on top guarantee that you’ll fall in love with them!

  • Preparing the potatoes and dough: Cook the potatoes in salted water, then peel them and blend into a smooth puree. Dissolve the yeast in warm milk with a pinch of sugar and let the starter rise (about 10 minutes).
  • Mixing the dough: In a large bowl, combine the flour, potato puree, the risen starter, the remaining milk, oil and a pinch of salt. Work into a smooth dough and let it rise in a warm place covered with a cloth for 45 minutes.
  • Second rising: Incorporate the melted butter into the risen dough and let it rise for another 30 minutes.
  • Shaping the pagáče: Roll the dough out to about 1 cm thickness and use a cutter or a glass to make rounds. Place them on a baking sheet lined with parchment paper.
  • Baking: Brush the rounds with beaten egg and sprinkle with grated cheese. Bake in a preheated oven at 180 °C for approximately 30 minutes, until golden.
  • Serving: Serve warm as a side dish or main course with a vegetable salad or your favorite sauce.

Tips:

  • For a more pronounced flavor you can add finely chopped herbs to the dough, for example chives or parsley.
  • If you prefer less rich pagáče, use semi-skimmed milk and cheeses with a lower fat content.
