Preparation procedure

  • In the milk we dissolve the pudding powder, the vanilla sugar and the egg yolks. We transfer the mixture to a double boiler and heat it, stirring constantly, until it thickens like pudding.
  • Remove from the double boiler, add the powdered sugar and rum, then place the bowl in cold water and whisk until the mixture has cooled.
  • In another bowl, whip the soft butter and gradually beat it into the cooled yolk cream, a teaspoon at a time.
