Vanilla wreaths are among the most delicate desserts of Czech and Slovak confectionery. The fragile choux pastry, light vanilla cream and the sweet aroma that fills the whole kitchen – it’s a combination that never fails. This traditional recipe will show you how to prepare homemade wreaths so they taste like they’re from a pastry shop.

Preparation procedure

  • Dough preparation: Pour water into a pot, add a pinch of salt and the butter. Heat until the butter melts, but do not let the water boil. Once the mixture is hot, add the flour and stir quickly so lumps don't form. The dough will start to come away from the sides – stir for about 3–5 minutes, until it detaches from the sides of the pot.
  • Processing: Transfer the dough to a bowl and let it cool. Then beat in the eggs one at a time. The resulting dough should be smooth, glossy and thick. Transfer it to a piping bag fitted with a star tip.
  • Shaping and baking: On a baking sheet lined with parchment paper, pipe circles (wreaths) using the bag. Bake in a preheated oven at 200 °C for approximately 20 minutes. Do not open the oven for the first 10 minutes so the dough doesn't collapse. Then reduce the temperature to 170 °C and bake for another 5–7 minutes.
  • Cream preparation: Cook the pudding from the milk, vanilla pudding and Zlatý klas. To the hot pudding add the granulated sugar, a pinch of salt and a piece of butter to prevent a skin from forming. After it cools, add the remaining butter and whip until smooth.
  • Filling the wreaths: Cut the cooled wreaths in half, fill the bottom halves with cream using a piping bag, top with the upper halves and sprinkle with powdered sugar and vanilla sugar.
