The aroma of vegetable soup can evoke childhood memories and home cooking for many. This soup is simple to prepare, full of tasty vegetables that both children and adults love. With homemade noky the soup gains an even more delicate flavor and an interesting texture. If you don’t have fresh vegetables, feel free to use frozen ones, the same goes for the soup mix. This recipe will surely warm and satisfy you even on colder days.

- Preparing the vegetables: Clean the onion, garlic and leek. Wash the leek (use the white part) and cut it into smaller pieces. Peel the carrots. Grate one carrot coarsely and cut the remaining two into rounds or half-moons, depending on size. Chop the parsley similarly to the carrots. Separate the stalks and chop part of them finely, leaving the rest whole. Peel the potatoes and cut them into small pieces so they cook quickly.
- Preparing the soup: In a large pot heat 3–4 tablespoons of oil and add 2 tablespoons of butter. Add the grated and chopped carrots with parsley to the hot fat and let them sauté until the carrot releases its juice. Add the frozen or fresh vegetables, stir and let them fry for a while. Then add salt and pepper to taste. Pour water over the mixture, the amount of water depends on how much soup you want to make. Add the crumbled bouillon cubes and stir thoroughly. Add the whole onion, a piece of leek and the pressed garlic to the pot. Cover and simmer over low heat for about 7–10 minutes.
- Adding the potatoes and peas: After 7–10 minutes add the chopped potatoes and cook for another 5 minutes. Then add the frozen peas and cook for an additional 3 minutes.
- Preparing the dumplings (noky): Meanwhile, in a bowl beat the egg with salt and the chopped parsley. Gradually add the semi-coarse flour until a thick and slightly sticky dough for noky forms. If you wish, you can add a little oil to the dough for a better consistency.
- Cooking the dumplings (noky): When the peas are cooking, use a spoon to drop the noky directly into the soup and let them cook until they float to the surface.
- Finishing: When the noky are done, turn off the heat and add the whole parsley stalks to the soup. Cover with a lid and let the soup rest for about 5 minutes. Then stir and serve.
