Preparation procedure

  • Preparing the dough: Put the honey, cocoa, sugar, margarine, baking soda, and egg into a bowl and whisk them over a double boiler until foamy. Once the mixture thickens and comes together, remove it from the heat, add the flour and 1–2 tablespoons of milk. Work into a smooth dough, then divide it into three equal parts.
  • Baking: Roll out each part into a thin sheet and bake them one after another on the back of a baking tray (approx. 20 × 35 cm) lined with baking paper. Bake at 180 °C for about 7–10 minutes, until the sheets are lightly golden.
  • Cream: In a saucepan, mix the milk, flour and sugar. Cook over low heat until the mixture thickens into a dense porridge. Remove from the heat, let cool, then stir in the cocoa, rum (or rum essence) and gradually fold in the butter or margarine whipped until fluffy. The result should be a smooth and delicate cream.
  • Assembling the slices: Spread part of the cream over the first sheet and sprinkle with drained cherries. Cover with the second sheet, spread cream again and add cherries. Finish with the third sheet. Slightly weight the cake (e.g. with a board) and let it chill in the refrigerator for at least 4–6 hours, preferably overnight.
  • Chocolate glaze: Melt the chocolate with the oil and stir until smooth and glossy. Coat the chilled cake with the glaze and let it set. Then cut into slices.
