Cook, stirring constantly, until you have a thick cream. Cover with cling film and let cool completely. Whip the butter and gradually beat in the cold egg-yolk base in portions until a smooth cream forms.
  • Assembly: Spread the cream evenly over the cooled two-layer base and pour the melted chocolate glaze over the surface. Place in the refrigerator to set for at least several hours.
  • Cutting: Cut the slices with a sharp knife dipped in hot water so that the cut is clean and smooth.
