Preparation procedure

  • Sponge batter: Whisk the egg whites into stiff peaks with a pinch of salt. Gradually beat in the sugar, then the yolks, and finally pour in the oil in a thin stream. Fold in the flour mixed with the baking powder into the foam. Pour the finished batter onto a baking sheet (36 × 24 cm) lined with parchment paper and bake in an oven preheated to 180 °C for about 30 minutes. Let it cool, then cut the sponge lengthwise into two halves.
  • Peach mousse: Dissolve 3 peach jellies in 500 ml of hot water and let cool. Meanwhile, puree the peaches with their syrup and heat in a saucepan. Add the last packet of peach jelly and stir until it dissolves. Spread the hot peach mousse over one half of the sponge. Place a layer of cookies on top and let cool until the mousse sets.
  • Quark layer: Put the quark into a bowl and, while stirring constantly, gradually add the cooled jelly (from the previous step). When the mixture starts to thicken, spread it over the cookies. Cover with the second half of the sponge, press down lightly, and refrigerate.
  • Top jam glaze: Bring the peach jam to a boil and, after removing from the heat, stir in the gelatin. While still hot, spread the mixture over the top of the cake. Let chill, ideally overnight.
