Preparation procedure

  • Preparation of the pancake batter In a bowl whisk the eggs with the milk and sparkling water. Add the vanilla sugar, a pinch of salt and the all-purpose flour. Whisk into a smooth batter without lumps. Let rest for 20 minutes – the pancakes will be more tender.
  • Frying the pancakes On a hot pan brushed with a drop of oil fry thin pancakes until golden. This batch yields approximately 10 pieces.
  • Quark filling In a bowl mix the quark, vanilla sugar, drained raisins and finally gently fold in the beaten egg whites. The filling will be light and fluffy thanks to the whites.
  • Filling and arranging the pancakes Fill each pancake with the quark mixture, roll up and cut in half. Place the individual pieces closely next to each other in a baking dish.
