Preparation procedure

  • Preparing the pan: Prepare a baking pan approximately 21 × 36 cm, grease it with butter and dust with flour.
  • Dough: In a bowl, mix the flour with the baking powder. In another container, whip the egg whites to stiff peaks. Beat the room-temperature butter with the sugar until fluffy, then add the flour, ground walnuts and half of the egg whites. Mix lightly and add the remaining egg whites, folding them in gently. Spread the finished batter into the prepared pan.
  • Baking: Bake in an oven preheated to 180 °C for about 20 minutes, until the dough takes on a golden color.
  • Egg-yolk glaze: While baking, beat the egg yolks with the sugar and vanilla sugar into a thick, pale foam. Immediately after taking the dough out of the oven, spread it with the egg-yolk glaze and put it back into the turned-off but still warm oven for 30 minutes so the glaze can dry and set.
  • Chocolate cream: Put the butter, chocolate, sugar and milk into a saucepan. Heat over low heat until everything melts and combines into a smooth cream. Remove from the heat and add the ground walnuts. Stir and pour the still-warm cream over the cooled egg-yolk glaze. Smooth the surface.
  • Finishing: Let the cake cool and then put it in the refrigerator so the cream can set. Finally, sprinkle the surface with ground walnuts.
