Walnut Izidor cups are inspired by the popular dessert Opilý Izidor. Each piece is a small dessert – a tender walnut pastry, a moist rum filling inside, a delicate chocolate cream on top and everything finished by being bathed in chocolate glaze. The flavor develops best after a few days of resting, so prepare them in advance and they will shine on every festive platter at Christmas.

Preparation procedure

  • Preparing the dough Sift the flour and sugar into a bowl. Add the egg, lemon juice, ground walnuts and cold butter cut into pieces. Quickly work into a smooth dough. Wrap in cling film and refrigerate for 1 hour.
  • Shaping and baking the cups Take small pieces of dough and press them into dry molds so that a hollow remains in the center. Place the molds on a baking sheet and bake in a preheated oven at 180–190 °C for 12–15 minutes. After baking, unmold them while still hot and let cool.
  • Nut filling Mix the hot milk with the walnuts and sugar, heat briefly and remove from the heat. Add the rum and let cool completely.
  • Chocolate cream Heat the eggs, sugar and cocoa over a double boiler and whisk until the mixture thickens to a pudding-like consistency. Remove from the steam and let cool completely. Whip the butter until fluffy and gradually incorporate the cooled cocoa mixture. Beat until smooth.
  • Filling the cups Spread jam inside the cooled cups. Fill with the nut mixture (about 1 teaspoon per cup). Chill in the fridge for at least 30 minutes. Then pipe the chocolate cream onto the nut filling and chill again for 30–60 minutes.
  • Chocolate glaze Melt the chocolate, butter and oil in a double boiler and let rest for 5 minutes. Dip the creamy part of the cups into the chocolate – work quickly so the cream doesn't start to melt. Place them in the fridge as you go.
