Laskonky are one of the classic Czech cookies that never disappoint. Crisp, fragrant, with a subtly nutty taste and a perfectly sweet caramel cream – just like our grandmothers used to make. You can manage this recipe even without any confectionery experience and the result will be literally irresistible. You only need four basic ingredients for the dough and delicious caramelized condensed milk with butter for the cream.

Preparation procedure

  • Dough preparation Place the egg whites and sugar in a bowl. Set it over a pot of gently simmering water and whisk over the bain-marie for about 15 minutes at low speed, until the mixture acquires a thick, glossy consistency. Then let it cool slightly. Fold in the ground walnuts and powdered sugar. Transfer the mixture into a piping bag or use a template for laskonky. On a baking sheet lined with parchment paper, shape oval laskonky and smooth the surface.
  • Baking and drying Bake in a preheated oven at 120 °C for approximately 15 minutes, then reduce the temperature to 80 °C and let the laskonky dry with the oven door slightly ajar. When the laskonky are firm and dry, let them cool completely.
  • Cream preparation Let the butter and the caramelized condensed milk come to room temperature. Whip the butter until fluffy and gradually add the caramelized condensed milk. Whisk until a smooth and airy caramel cream forms.
  • Assembling the laskonky Sandwich two laskonky together with the cream. For a festive appearance you can lightly drizzle the surface with melted dark chocolate. Chill until set.
