Preparation procedure

  • Preparing the dough: Melt the butter and let it cool slightly. In a bowl, beat the butter with the sugar and vanilla sugar until light and fluffy. Add the eggs and mix. In another bowl, combine the ground walnuts, flour, baking powder and salt. Gradually work the dry ingredients into the butter mixture until a soft dough forms.
  • Shaping the nests: Shape the dough into small balls and place them on a baking sheet lined with parchment paper. Slightly flatten each ball and use your finger or the end of a wooden spoon to create a depression in the center. Leave space between the nests, as the dough will rise slightly during baking.
  • Baking: Preheat the oven to 180 °C and bake for about 15 minutes, until the nests begin to turn golden. After baking, let them cool completely so the chocolate doesn't run when filling.
  • Preparing the chocolate filling: Heat the cream in a saucepan, remove it from the heat just before it boils and pour it over the broken chocolate. Stir until a smooth glossy cream (ganache) forms. Let it cool slightly so the chocolate thickens.
  • Filling and decorating: Spoon the chocolate cream into each cooled nest using a teaspoon or a piping bag. Finally, you can decorate with a walnut half. Place the finished nests in the refrigerator for at least an hour to allow the chocolate to set.
