  • Beat the egg whites with the powdered sugar and lemon juice into a stiff, glossy meringue. Set aside one third of the mixture for the topping, leaving the rest in the bowl. To the larger portion of the meringue add 200 g ground walnuts and gently fold until you obtain a compact dough.
  • Sprinkle 100 g ground walnuts onto the work surface and briefly work the dough on them. Shape into a rectangle approximately 8 × 20 cm and about 1 cm thick. Spread the reserved egg-white mixture evenly over the surface. Then cut with a sharp knife into sticks about 1 cm wide and place them on a baking sheet lined with parchment paper.
  • Bake by drying at 80 °C for approximately 90 minutes. Allow the walnut sticks to cool after drying and then serve.

Total preparation time: approx. 1 hr 50 min (10 min preparation + 1 hr 30–40 min drying)
