Sweet yeast crescents with apricot jam are among the best things you can bake for the weekend. They are wonderfully tender, smell of butter and are suitable for breakfast, a snack or for serving guests. You can make them from ordinary ingredients and even a beginner can manage them.

Preparation procedure

  • Starter Crumble the yeast into a bowl, add 1 tbsp sugar, 1 tbsp flour and 100 ml lukewarm milk. Stir and let it rise for 10–15 minutes.
  • Dough Into a large bowl add the sifted flour, the remaining sugar and a pinch of salt. Pour in the risen starter, add 1 egg, the remaining lukewarm milk and the melted, cooled butter. Work into a smooth, soft and non-sticky dough (by hand 8–10 minutes or in a stand mixer with a hook 6–7 minutes). Cover the bowl and let it rise for 60 minutes, until it has doubled in volume.
  • Shaping Briefly knead the risen dough and divide it into 3–4 equal pieces. Roll each piece into a circle about 26–28 cm in diameter, cut into 8 triangles. Place 1 teaspoon of jam on the wider edge of each and roll into a crescent. Seal the tip underneath so the filling doesn't leak during baking.
  • Second rising Transfer the crescents to baking trays lined with baking paper, cover with a cloth and let rise for another 15 minutes. Meanwhile preheat the oven to 180 °C (top/bottom heat).
  • Baking Brush the surface with the beaten egg mixed with a little milk. Bake for 18–22 minutes until golden. Let cool briefly on a wire rack and optionally dust with powdered sugar.

Tips and serving

  • Choose the thickest jam possible (ideally homemade), it won’t run and the crescents will stay nicely shaped.

  • The dough should be soft – don’t dust with more flour than necessary. This will make the crescents fluffy.

  • Feel free to substitute part of the apricot jam with plum preserves or cherry jam.

  • Store cooled crescents in an airtight container. They’re great the next day too; they can also be frozen.
