Preparation procedure

  • Preparing the starter: Pour lukewarm milk into a bowl, crumble in the yeast, add a teaspoon of sugar and a little flour. Stir and leave for 10–15 minutes in a warm place until the starter bubbles up.
  • Kneading the dough: Sift the flour into a large bowl, add the remaining sugar, vanilla sugar, egg yolks, salt, lemon zest, the risen starter and the melted butter. Work into a smooth, elastic and non-sticky dough (by hand or in a mixer with a dough hook, about 10 minutes).
  • Dough rising: Cover the bowl with a clean cloth and leave to rise in a warm place for about 1 hour, until the dough doubles in size.
  • Shaping the buns: Divide the risen dough into 20 equal pieces. Flatten each piece, put a teaspoon of jam in the middle and seal well. Place seam-side down into a butter-greased baking dish. Brush each bun on the sides with butter so they don't stick together while baking.
  • Second rise: Let the buns rest in the baking dish for about 20 minutes more to rise again.
  • Baking: Place in an oven preheated to 180 °C (fan 160 °C) and bake 30–35 minutes until golden.
  • Finishing: Brush the hot buns immediately after taking them out with melted butter and let cool on a rack. Before serving you can lightly dust with powdered sugar.
