Ingredients

Preparation procedure

  • Preparing the starter: Crumble the yeast into the lukewarm milk, add a little sugar and let the starter rise (approx. 10 minutes).
  • Dough handling: Put the flour, sugar, salt, egg and melted butter into a bowl. Add the risen starter and work into a smooth, supple dough. The dough is greasier, easy to work with and does not stick.
  • Spreading the dough: Immediately spread the finished dough onto a dry baking tray. It does not need to rise beforehand.
  • Placing the fruit: Evenly distribute the chosen fruit over the dough. We recommend seasonal or stewed (compote) fruits that will release juice and add moistness to the cake.
  • Topping: Sprinkle the cake with a classic streusel made from flour, sugar and butter.
  • Proofing and baking: Let the cake rise only while the oven preheats to 185 °C. Then bake for approximately 20 minutes until golden.

Conclusion

This simple yeast fruit cake is ideal when you fancy a quick dessert without unnecessary waiting. The dough is pleasant to work with, the cake smells wonderful and tastes great even the next day. We recommend trying it with different types of fruit according to the season – it always delights and disappears from the tray in no time.
