Preparation procedure

  • Preparing the starter (5 min) In a small bowl mix 100 ml of lukewarm milk, a pinch of sugar and crumble the yeast. Let stand for 5 min until the starter begins to foam.
  • Preparing the dough (15 min) In a large bowl combine the remaining milk, egg yolks, sugar, softened butter, crushed gingerbread, lemon zest and salt. Add the starter and gradually incorporate the flour. Knead for 5 min until a smooth, slightly sticky dough forms.
  • First rise (60 min) Cover the bowl with a cloth and let rise in a warm place for 1 hour, until the dough doubles in volume.
  • Shaping the crescent rolls (15 min) Divide the risen dough into 12 equal pieces. From each form a ball, roll out into an oval, spread poppy seed filling on one half, cut the other half with a pastry wheel up to the edge, and roll into a crescent shape.
  • Second rise (30 min) Transfer the rolls to an oiled baking sheet, cover with a cloth and let rise for 30 min.
  • Baking (20 min) Preheat the oven to 180 °C. Brush the rolls with the egg and milk mixture and bake for 18–20 min until golden.
