- Preparation of the brine: Boil the water and add all the spices, including the bay leaf. Let it boil for 1 minute and then remove from the heat. Let the solution cool, then draw some into a syringe.
- Salting the meat: Inject the brine into the meat at various spots and depths to ensure even salting and juiciness.
- Marinating the meat: Immerse the meat in the remaining salty brine and cover it. Leave in a cool place for 3 days, turning the meat regularly.
- Preparation for cooking: After 3 days tie the meat with twine and wrap it in cling film.
- Cooking: Bring the water to 80 °C (it will start to actively evaporate) and reduce the heat to a minimum. Place the meat in the pot and cook for 2.5 hours. It is important that the water temperature does not rise above 80 °C. After the time has elapsed, pour cold water over the ham, let it cool completely and then put it in the fridge for another 2 hours.
- Serving: The homemade ham is now ready to serve! Store it in the refrigerator, where it will keep for up to 5 days, but you'll probably eat it sooner!
