Zucchini is a popular summer ingredient, but when prepared properly, it can shine during the rest of the year as well. These zucchini patties with a creamy walnut and garlic spread are a perfect example. Slightly crispy on the outside, tender inside and complemented by a strongly flavored cream that gives them a kick. The recipe is quick, simple and budget-friendly – an ideal lunch, dinner or treat for guests.

Preparation procedure

  • Prepare the zucchini Wash the zucchini, grate it finely and place it in a colander. Salt it and let it stand for 10 minutes to release excess water. Then squeeze it thoroughly – the less water that remains, the better the patties will hold their shape and the crispier they will be.
  • Mix the batter for the patties Transfer the squeezed zucchini to a bowl, add the eggs, flour, oregano, pepper and, if necessary, a pinch of salt. Stir until you have a thick batter. If it's too runny, add a little more flour.
  • Fry the patties Heat the oil in a pan. Use a spoon to form smaller patties and flatten them with a spatula. Fry 2–3 minutes on each side until golden. Let the finished patties drain on paper towels.
  • Prepare the spread Chop the walnuts finely (or briefly blend them). Mix them with the cream cheese, garlic and chopped herbs. Season to taste.
  • Serve Serve the zucchini patties while still warm with a generous portion of the walnut-garlic spread. For a nicer presentation, garnish with herbs or sprinkle with crushed nuts.
