Are you looking for a light yet satisfying recipe to replace classic meat patties? You’ll love these zucchinis filled with Parmesan: they are moist, full of flavor and you can prepare them without complicated coating. They go great with boiled potatoes, vegetables or just with a salad.

Preparation procedure

  • Preparing the zucchini Wash the zucchinis, peel them or just remove the skin if desired, coarsely grate and place in a bowl. Salt, mix and let them sweat for 5–10 min. Then drain the excess water or gently squeeze the zucchini in a kitchen towel.
  • Mixing the mixture To the squeezed zucchini add the egg, breadcrumbs, plain flour, crushed garlic and, to taste, the chopped herbs. Thoroughly mix the mixture until it comes together into a pliable mass. Finally stir in the grated Parmesan.
  • Shaping the patties From the prepared mixture shape flat patties by hand about 6–7 cm in diameter and place them on a baking sheet lined with baking paper or lightly greased with oil.
  • Baking Drizzle the patties with olive oil and bake in a preheated oven at 180 °C for 20–25 min, until they turn golden. You can flip them halfway through baking so they become evenly crispy.
  • Serving Serve warm, accompanied by a fresh salad, boiled potatoes or plain yogurt as a dip.
