Preparation procedure

  • Preheat the oven to 190 °C and prepare a baking tray lined with parchment paper. Lightly grease the surface of the paper with oil or butter.
  • Zucchini base: Grate the zucchini, wrap it in a cloth and squeeze out as much liquid as possible. In a large bowl, mix the zucchini, eggs, Parmesan, flour, salt, pepper and oregano into a smooth mixture.
  • Baking the base: Spread the zucchini mixture evenly onto the tray into a thin rectangle (approx. 30 × 25 cm). Bake for 20–25 minutes, until the base firms up and turns golden.
  • Adding the filling: Remove from the oven and let cool for 5 minutes. Evenly spread the slices of ham and cheese. If you like extra juicy rolls, sprinkle them with more grated cheese.
  • Rolling: Using the parchment paper, start rolling from one long side into a tight roll.
  • Finishing the baking: Place the roll seam-side down back on the tray and bake for another 5–8 minutes, so the cheese melts completely.
  • Serving: Let the roll cool slightly, slice into 3–4 cm rounds, garnish with chopped parsley or basil and optionally sprinkle with Parmesan.
