Preparation procedure
- Preparation of the white dough: Cut the butter into cubes and mix with the flour using a whisk. Add ice-cold water by tablespoons and knead thoroughly until the dough comes together. Turn the dough out onto the board and knead briefly by hand, form a loaf and wrap it in cling film. Store in the refrigerator for at least 2 hours.
- Preparation of the dark dough: Whip the egg yolks with the powdered sugar until frothy. Stir in the sifted cocoa and the grated nuts. Gently fold in the beaten egg whites.
- Baking: Divide the dough in half. Roll out one half of the white dough onto parchment paper and transfer to a baking tray. Use a pastry wheel to cut into squares or rectangles and bake in an oven preheated to 170 °C for about 10–12 minutes, until it turns golden. Roll out the remaining white dough and place it in the same tray. Pour the dark dough over it and bake for about 25 minutes.
- Preparation of the cream: Cook the pudding from the pudding powder, milk and half of the sugar. After cooking, remove the pudding from the heat, stir in the egg yolk and let cool. Into the cooled pudding, mix in the whipped butter with the remaining sugar by teaspoons, mix everything thoroughly.
- Assembly: Spread the cream over the cooled dark dough. Cover with the squares of white dough, dust with sugar and serve.
