Preparation procedure

  • Cake layers: Whisk the egg whites into stiff peaks, gradually add the sugar and beat well. Fold in the egg yolks, flour and chopped nuts. Spread the batter evenly on a baking tray lined with parchment paper. Bake in a preheated oven at 180 °C for about 20 minutes. Prepare two identical layers.
  • Cream filling: Whisk the egg yolks and sugar over a double boiler into a thick, pale cream. Let cool. Beat the butter with the powdered sugar into a foam and gradually beat the egg yolk base into it. Divide the cream into two parts. Stir the melted dark chocolate into the first, and the ground walnuts and hazelnuts into the second.
  • Assembling the cake: Spread the chocolate cream on the first layer. Place the second layer on top and spread it with the nut cream. If necessary, you can assemble the cake the other way around (nut cream first, then chocolate cream).
  • Glaze: Melt the chocolate with the oil and pour it evenly over the top of the cake. Let it set.
  • Edges: You can decorate the edges of the cake with chocolate whipped cream or a buttercream with cocoa.
