Preparation procedure

  • Preparing the starter and the dough Mix the lukewarm milk with the sugar and yeast, let stand for about 10 minutes until the starter begins to work. Then add the eggs, melted butter and the flour with a pinch of salt. Work into a smooth, elastic dough.
  • First rise Cover the dough with a cloth and let it rise for about 1.5 hours in a warm place. For an even more tender result, after rising place the dough in the refrigerator and let it rest overnight.
  • Shaping the rolls In the morning roll the dough out into a rectangle about 0.5 cm thick. Spread it with softened butter, sprinkle with the brown sugar and cinnamon mixture and roll tightly. Cut into slices about 4 cm thick.
  • Second rise Transfer the rolls to a baking sheet lined with parchment paper, cover and let rise for another 45 minutes.
  • Baking Bake in an oven preheated to 180 °C for 20–25 minutes, until the rolls are golden.
  • Finishing After cooling slightly, spread with the glaze made from powdered sugar and lemon juice or milk.
