Finally add the egg yolk and work into a smooth dough. Wrap the dough in cling film and let it rest in the fridge for at least 30 minutes.
  • Cooking the vanilla pudding Pour the milk into a saucepan, add the pudding powder and sugar and, stirring constantly, cook until a thick pudding forms. Once it thickens, remove from the heat and let it cool slightly. The pudding should still be pourable, not completely cold.
  • Preparing the apples Peel the apples, remove the cores and cut into thin slices. Drizzle with lemon juice to prevent browning. Optionally stir in a pinch of cinnamon.
  • Assembling the pie Take the dough out of the fridge and divide it into two parts – a larger one for the base and a smaller one for the top layer. Roll out the larger portion into a sheet and transfer it into a pie dish about 24 cm in diameter. Press onto the bottom and sides. Pour the prepared vanilla pudding onto the dough and spread evenly.   • Baking Preheat the oven to 180 °C (convection). Bake the pie for about 40 minutes, until the pastry turns golden and the apples are nicely cooked.
  • Serving Let the pie cool for a while, then dust with powdered sugar. Serve plain, or with a scoop of vanilla ice cream or homemade whipped cream.
