Cabbage may not be one of the first ingredients that come to mind when preparing baked dishes. Still, in combination with spinach, herbs and cheese it becomes a delicious, hearty yet light dish that even those who rarely seek out vegetable meals will fall in love with. This baked vegetable casserole of cabbage and spinach is beautifully creamy, fragrant and, thanks to the cheese, pleasantly full of flavor.

Preparation procedure

  • Preparation of the cabbage Finely chop the cabbage, lightly salt and squeeze it with your hands to release its juices. Squeeze out the excess liquid – this will prevent the base from being watery.
  • Basic mixture In a bowl whisk the eggs with salt and pepper. Add the cabbage, red bell pepper, spring onion, parsley, cheddar, Provencal seasoning, flour and baking powder. Mix everything thoroughly.
  • First baking Grease a baking dish with oil and spread the mixture evenly. Bake in a preheated oven at 180 °C for about 25 minutes, until the surface is lightly golden and the mixture has set.
  • Spinach filling Briefly sauté the spinach in a pan until wilted. Let it cool slightly and then mix it with the cream cheese and garlic. Season with salt and pepper.
  • Finishing Remove the base from the oven, spread the spinach filling evenly, sprinkle with mozzarella and return to the oven. Continue baking at 200 °C for another 10–15 minutes, until the surface is golden and the cheese is melted.
  • Serving After removing it from the oven let the casserole rest briefly, then cut into portions.
