- Preparing the potatoes: Preheat the oven to 200 °C. Wash the potatoes, pierce them lightly with a fork and bake for 30 to 40 minutes, until tender. Then let them cool.
- Preparing the mixture: In a large pan heat the oil (or butter) and add the chopped garlic and onion. Sauté over medium heat for about 5 minutes, until the onion softens and becomes translucent.
- Scooping out the potatoes: Cut the potatoes lengthwise and carefully scoop out the center to create space for the filling.
- Mixing the filling: Add the scooped-out potato flesh to the pan with the onion and garlic. Stir in the grated cheese, salt and pepper and mix well so all the flavors combine.
- Filling the potatoes: Prepare a baking tray lined with parchment paper. Place the potatoes on the tray and fill them with the mixture. Use a spoon to level the surface and create a small indentation for the egg.
- Baking with the egg: Crack one egg into each potato. Sprinkle with chives and bake in the oven for 10 to 15 minutes, until the whites are fully set but the yolks remain soft.
